This is a great side dish to compliment any cut of meat, it can be served hot or cold, and makes great leftovers. It’s sweet with the raisins, salty with the….salt, rich with ghee, crunchy with the pecans, and has a smoky, zest to it with the roasted nuts and orange peel.
Ingredients:
2 Tablespoons ghee
1 Yellow onion, sliced
1 Bunch dinosaur kale, sliced into 1” strands
3 Cloves garlic, sliced
1/2 tsp. Salt
1/2 Cup raisins
1/2 Cup pecans, chopped
Zest of 1 orange
Instructions:
1.Preheat oven to 325.
2.Heat up ghee in skillet over medium heat and cook down onion for 15 minutes (I know this seems excessive but you want to marinate the onion in all the fatty goodness.)
3.Roast pecans for 5 minutes.
4.Add kale, garlic, salt and raisins into skillet and cook until kale is no longer tough.
5.Turn heat to low, and add pecans and orange zest.
6.Eat.
